As most of you know we are taking a short
break while we prepare the episodes for the new series. In place of our regular episodes

Mable's Famous
Chili Concarne
Superb dish that can be made without meat also...
Ingredients:
- 2 to 3 lbs ground beef (Cholesterol watchers use extra trim
beef)
- 3 cans dark red kidney beans
- 1 onion diced
- 1 green pepper diced
- Crushed red pepper flakes
- Chili Powder
- 2 cans stewed tomatoes
- 2 cans tomato sauce
- 1 can tomato paste
- 1 sprig parsley
- Worcestershire sauce

How to prepare it...
Sauté beef in fry pans with onion and green peppers. Season mixture with pepper, Tabasco
sauce and a pinch of Worcestershire sauce to taste.
Place sautéed mixture into large stock pot and add kidney beans, tomato sauce stewed
tomatoes and tomato sauce. Add chili powder to taste. I use about one half small jar and
sprinkled with crushed red pepper flakes to taste. (watch out these are hot).
Cook over low heat on stove for 1 and one half to 2 hours.
Server over rice with a great French bread or skip the bread and serve with red wine and
a wonderful coleslaw.
(Watch it you Atkins people - leave out the bread like I have to.)
You can make this into vegetarian chili. Just substitute zucchini, yellow squash, red and
yellow peppers for the meat and follow the same procedure.
